Sauce experiment..

Postby Burnt Food Dude » Mon Sep 03, 2007 7:05 pm

I don't know if anybody has tried this. I was working on a recipe from one of Raichlans books and came up with a variation.

1 C KC Masterpiece
1/3 C Honey
1/4 C Apple Juice
2 T Brown Sugar (I used light)
2 T Cider Vinegar
2 t Favorite BBQ rub (I used Wolf Rub Bold)
10 Shakes of Chipotle flavored Tobasco Sauce

It turned out pretty good. The wife did say it was a tad peppery for her tongue. Did, I mention she's a pepper wimp. It seems to go pretty good on spare ribs.

BFD, thats a nice little recipe there...did you heat it up or serve it cold?

I always like a good base a doctor'n it up. 8)

I always smell the cider vinegar when I heat up a sauce recipe with it in there - kinda smells weird (to me). You?

Sounds like a purty good recipe there, BFD. I may have to try that. Looks like it may have been a sweeter sauce, with the honey, apple juice, and brown sugar.

I heated it up when I wisked it all together. Simmered for about 10 minutes to thicken up and let cool to room temp. I put it on the ribs at room temp and put them back in the smoker for about 20 minutes.

Yes, it would seem sweet but the cider and tobasco cuts the sweet a bit. You could vary the cider & tobasco to change the taste.

Shoot, KC Masterpiece is already sweet enough to frost a cake with.
I'd try a raspberry+chipotle version, myself (after I use up my current batch, tha tis)
