Brine and injecting Pork Butt
Hey all, getting ready to smoke up a pork butt tomorrow. They usually turn out pretty good, but I want to hit the jackpot. Do most of you brine and inject your pork butts, or just inject. I was planning on brining for 8 hours then injecting it and rubbing it. Any advice on whether I need to do both or would 1 or the other be better. Thankya much.

At home, neither. At comps I inject only. Sweet Smoke Q Juice is some crazy good stuff!

I inject only
1 cup Apple juice
1/2 cup Worcestershire
1/8 cup Sucklebusters Hog Waller
Then generously rub down the butt with the hog Waller

I through a hand full of salt at it and cook it. That butt has all it need to get happy courtesy of the pig. Apply a liberal dose of Hickory smoke combined with some time and listen to the rave reviews.
Never met a cow I didn't like with a little salt and pepper.

Thanks guys. I thought injecting and brining would be overkill. Where do you get the Sweet Q sauce that you were referring to? I have the Hogwaller, so will use that tomorrow. Thanks again.

Sometimes simplicity really is the best course of action.

I use a rub and that's it. I do spritz with a mix of apple juice and cherry schnaaps every hour or so. Helps produce that nice bark. I have never injected a piece of meat in my life. But I don't comp cook either.

It was my first time injecting a piece of meat as well. My pork butts are usually pretty good. I have to admit when I injected it, it even made it better. It was a major success. Trying to refine my skills so I can start doing some competitions in the near future.

If you are going to comps then you are going to want to inject. To me you are leaving a path for the juices to get out just as sure as you are making a path to put them in by using the needle
