Which Paprika are you using? I'm trying out two rubs this weekend, one with Hungarian paprika and the other with Smoked Spanish Paprika (Pimenton).

Old thread, but if anyone reads my post, take the brown sugar out of your seasonings. Then before you season your meat ruball the meat down with brown sugar, then add seasoning and rub it all in.

The brown sugar crystalizes around the meat and holds in juice.

Good point - - - I not only put brown sugar in my rub on my 3-2-1 Pork Ribs before starting the cook BUT then 'again' during the cook right before wrapping them in foil. :dont:
