Second Batch without Hatch

I'm down to my last pint of five and I am addicted to this Roasted Pepper Salsa. Even tho I only gave one pint away I realize I need to make a larger batch this time. So I raided a couple of Grocery stores and ended up substituting Anaheim for the non-seasonal Hatch of the last batch. Found some Red Jalapenos that I'm looking forward to using and everything is tucked away in the bottom bin of the frig. The quantity is spooking me some but I'm gonna wait until tomorrow and maybe even crank tow Pits to get this done. Outlaw has also suggested some additions that I plan on making this time and that's exciting as well. Now if Family will be healthy for a day we'll see what happening man-yawner.

OH, the canned Rotels are the Roasted kind that I only use for liquid if needed. :whiteflag:

Looks like a real hot one with the Serranos and Jalapeños. Think I would put a few more tomatoes. No, not a few more - a lot more. Like maybe 20 more. :D Buena suerte Amigo.

We have spoken privately so I know where your head is at on this batch. Everything looks good to me other than onion ratio. I would at least triple that. Can't wait to see it. I will be lurking in the background. :chef: :chef: :chef:

Nice colors, not to many tomatoes which is what I think the majority of folks do, end up making warm catsup. How did it taste? :happ: :happ:
