I know alot of our local Conservation Officers swear by marinating venison in a buttermilk marinade to cut back on the gaminess of the meat. I don' t know an exact recipe though. I'm sure you could add garlic and other spices to taste.

This from Steven Raichlin's book Marinades, Wet Rubs and Spice Pastes. Credit is attributed to a Chef Fernand Chambrette who used this marinade for wild boar.
3 cups dry red wine
1/2 cup balsamic vinegar
1/2 cup EVOO
2 TBL Gin
1 medium onion, sliced thin
1 carrot, sliced thin
1 rib celery, sliced thin
2 cloved garlic, smerched
3 TBL chopped fresh parsley
2 tsp juniper berries
2 tsp black peppercorns
2 bay leaves
2 whole cloves
2 sprigs fresh thyme
Combine all the ingredients in a saucepan and bring to a boil over medium-high heat. Cool to room temperature.
Says to marinate steaks 2 - 4 hours, roasts for 24 hours.
