Fruit Preserves

Postby LOW-n-SLOW » Mon Jan 15, 2007 1:05 am

Anyone ever tried injecting fruit preserves into the meat they smoke? A buddy of mine that I sometimes like to cook woth thought about injecting it in some deer hindquarters or wild hog hindquarters.

I tried a raspberry salad dressing not too long ago...on a deer and hog shoulder....injected and then let it set for a day.. (like marinating in Italin dressin )...did not care for it too much....

But I am sure it would work with the right combo of spices and fruit....just have to find the right combo :D

Nice to have a fellow wild game smoker on here

I've never tried injecting with it, but I have used some Pineapple Habanero jelly as a glaze on a pork loin.

From a company called Texas Pepper Jelly. He has many different flavors blended with Jalapeno or Habanero. I also got a jar of his Blueberry Jalapeno which was very good.
