Tartar Sauce: I have no hard and fast recipe for the stuff, but it pretty much goes like this:
1 cup Mayo
3 Tbsp chopped up Dill pickle or (use pickle relish)
1 Tbsp Granulated Onion
2 tsp Tbsp Lemon zest (grated peel)
2 tsp tsp Lemon juice
Pinch of sugar (omit if using pickle relish)
Mix it all up and season with salt and white pepper to taste. Refrigerate for a day to let flavors meld for best results.

I prefer cocktail sauce for shrimp, but sadly have no recipe for one :(

Cocktail Sauce:

I don't measure either - mix, taste, adjust

1 cup ketchup
juice from two lemons
2 - Tbps prepared horseradish

Go up or down with the horseradish to adjust for taste

Edit after submitting - Looks like Big Ed has a quicker draw than EH

When I cook shrimp, I do a 50/50 mix of ketchup and mayo then quirt a little bit of lemon juice in it. May have to adjust the mix a little but it should be about this color.

My wife was hesitant at first but once she tried it we dont do cocktail sauce here any more.

Yeppers, good info here. I've always associated tarter sauce with fish and cocktail sauce with shellfish. I make a tartar sauce like Dat's does (ingredients vary depending on what's in the fridge/pantry at the time) and the cocktail sauce like EH.

Here's a cocktail sauce I make most of the time....

Jim's Spicy Cocktail Sauce
-------- ------------ --------------------------------
3/4 cup catsup
1/4 cup chili sauce...Jim's Chili Sauce
2 Tblsp lemon or lime juice, I prefer lime juice
1 Tblsp Worcesterhire sauce
3 Tblsp Prepared Horseradish-fine cut
dash or two of Cholula hot sauce....to taste

1. Combine ingredients, mix well

2. Chill before serving.

----------------------------------------------

Here's a spicy Jalapeno Tartar Sauce that's real good.....................

JALAPENO TARTAR SAUCE
-------- ------------ --------------------------------
1/2 cup mayonnaise
1 Jalapeno pepper, cored, seeded, and finely chopped
1 Tbs minced parsley
1 Tbs minced onion
1 tsp pickle relish
2 tsp lime juice
1 tsp prepared horseradish
1 tsp lemon juice
1/4 tsp salt

1. Prepare the tartar sauce by mixing all the ingredients together in a
small bowl.

2. Refrigerate until needed.

I'm liking the way that Jalapeno Tartar Sauce looks! Gonna give that one a try next time I fry up some fish. Thx!
