Mexican style smoked ribs

Mexican style smoked ribs
Anyone here ever make any ribs with a 'South of the Border' type rub? I recently had Papasitos ribs and really enjoyed that rub they put on there. El Tiempo does their ribs/quail in a similar style. I've got about 8 racks of ribs I'm smoking this weekend and would like to experiment a little with a couple of them and would love to hear your thoughts.

Sounds good to me, so what types of seasonings are you thinking of to get the Mex style and taste

That's a good question, OUP. I was thinking....
saucing up the ribs with some adobo sauce and then coating the ribs with a mix of
brown sugar
chili powder
s&P
corriander
onion powder
oregano
and maybe a hint of cinnamon

I saw this post and thought you were talking tablitas. We love grilling those grease bombs at our house.
To what you are talking about. I think a Mexican spiced rib sounds good. Maybe start with a Fajita type rub and serve like a Memphis dry rib?

Something you might consider is to go to the Fiesta Rack and see what they have that you might use in your creation. Good Luck and be sure and share the Recipe

I thought about that but am trying to avoid the 'taco seasoning' taste and in order to do that I thought that either cumin or chili powder needed to be eliminated.

Not a bad idea.....I'm headed to HEB right now. I'll check their seasoning blends.

I had a Friend that simply used Fiesta Fajita Seasoning on his ribs and they were very good. I've enjoyed my Hog Waller from SB's since I got it and believe I'll stick with that.

Salt , pepper, smoked paprika would be s start for me. Never thought about Mexican style ribs at Pappaditas, always order a Chile relleno. Sounds good though.

Their menu says it’s slow smoked but I’d have to disagree, however I really enjoyed the rub they put on there.

I am familiar with the Mexican cross cut style ribs they call Costillas? Is that what your talking about?
