I just called Jack's Pak It , he has them for $3.99 a pound.

I'm debating separating it a little to cut down on the cook time. Been watching some clod butchering videos and smoking videos to get ready. 16 hours is a long time.

I separated the two big sections, the piece where the flatirons are came out nice and juicy and tender. That bigger piece took 15 hours to get up to 205 internal, it did come out fairly dry.

I don't have any personal experience cooking this cut of meet. But I had a buddy that used to cook at the Rodeo cookoff in Houston, and this is the cut of meat that he served to the guest to the booth. And I always found the meat to be dry. But I suspect he may have done it for yield reasons as KAM mentioned, not really sure.

I have seen folks cook it to slicing temps and slice it sandwich thin but I prefer it for chopped beef as it is hard to get one with sufficient marbling. Chop it lightly sauce it and enjoy on slider buns.

It would go a long way in the chopped beef category. Like I said, I have no experience with them. And don't know that I would ever have the need for that cut of beef.
