Thanks Emm; this particular Brisket was probably the best I’ve ever had; you know, each one is so different. This one was so tender and again, y’all are missing out if you don’t try the “ KAM PAN”

If I ever decided to brave a Brisket, it would definitely be via KAM's PAN PLAN

I smoked it for 6 hours and then panned it. I set the oven on my lowest temp, 170, from 11pm until 7 AM. I turned the oven up to 300 and it hit 195 IT around 9AM. I pulled it, heavily wrapped and sealed, and served at noon at a different location. It was still hot and fall apart tender

I used to do them in oven bags and then finish on the Smoker and they came out pretty good but not near enough smoke flavor to suit me and I'm too impatient to spend the needed time to properly cook them.
