I'm sure there's a thousand ways to get there. The way I get there is I get my Traeger to 350 and toss my ribs in. THE VERY SECOND the door is shut I set it to 225. Takes about 10-15min for the temp to drop to there. I smoke mine for 4 hours. I mop at the end of the first and second hour. I add sauce the last 30 min... sometimes I'll add sauce again once at the 4 hour mark and smoke for another 30 min for giggles and grins. I always get meat to shrink back a bit off the bone. (I also always brine, rub, and mop. Every once in awhile I won't sauce.) This is what I've found works great for me. Hope it helps. Take what ya want, leave the rest. Looks like you did a beautiful job on them ribs. Mmm... I've got some in the fridge right now, time for breakfast! :D

how do you know if they are real backs or loin backs?

Please elaborate further. Anything I find on the net just refers to the location origin as the definition of "baby back ribs".

Hey Guys,
Don’t you agree that there are very few things in life that can beat a rack of perfectly smoked barbecue ribs? Whether it is pork or beef, wet or dry rib rubs, the secret to smoking the perfect ribs is perfecting temperature and time.

If you are using a charcoal grill, all you need to do is build your fire to one side of the grill and do your cooking on the other. You can also create a smoky environment by placing a small pan with apple juice or water underneath your meat.

For most barbeque recipes, if I am smoking in the house, I find that the ideal temperature is 250 to 255 degrees Fahrenheit. At this temperature, it will take roughly 4 hours for baby back ribs to cook, while St. Louis-cut ribs will cook in about 4 hours.
