Smoking with sugar cane

Did I see somewhere that you can smoke using sugar cane? Is it any good?

Walked past a table full at the Mexican grocery and thought about buying some but thought that I would check here first.

Egghead uses sugarcane often. I'm sure he'll chime in on what foods it's best suited for. Been wanting to try it myself.

I use sugarcane more than anything to smoke pork and poultry. Sugarcane burns slower and emits less smoke flavor. About half. I use it in my propane smoker, as well as my charcoal pit. Just throw some on the coals. It is a favorite whenever I serve it. The best thing I can think of to compare it to is the smell when you char corn husks when grilling corn. When i do brisket, add half wood-half sugarcane.

Well done Ko - now there are three of us that I know of that use sugar cane :D

I first heard of it on a radio station in New Orleans - Food Critic used it to smoke hi Christmas turkey.

I use it all the time on poultry. Heavy with Hoochie Mama and smoke with sugar cane.

I cut it at the nodes and then split it - small hatchet is handy for this - then I freeze it in ziplocks. Straight from the freezer on to the lump after the lump is stabilized.

Six or eight split pieces and you don't have to wait for the smoke to clear - it's fairly mild.

I’m pretty new to smoking (so be nice lol) and want to try my hand at Buccaneer Chicken. 75 lbs of leg quarters to be exact. :shock: I just want to make sure I purchase enough sugar cane to get the job done. Any productive input is super appreciated.

I am VERY interested in this thread. I've never heard or 5hought of smoking with sugarcane. Does it infuse flavor like using wood, and does it give that sweet sugar taste? Sorry if these are crazy questions, but I am intrigued now.

Chknlady - I only use a few pieces of sugar cane for smoke flavor. Poultry can absorb a bunch of smoke and, IMHO, too much smoke on poultry is not good. Sugar cane provides a light smoke flavor and for our palate is just right for poultry.

I split a half dozen pieces that are 6-8” long and add them on top of the lump just before adding the meat.
