BBQ For 100

Yesterday I finally got a chance to fire up "Big D II" (Formally known as "One BadAss Predator") at a wedding reception that I was asked to cook for. Well I got up at 2am and drove to Bastrop where I dropped the pit off on Monday while on my way to Houston. I arrived at about 3am on the dot to be met by my buddy Clint who was already up setting up some lights for me. I fired up the pit and had 6 briskets on at 5am. The next thing on was 16 chickens that we split and brined overnight, I smoked them in the main chamber for 2 hours them transferred them into the "oven" above the firebox where I finished them up. The last items in were 2 pork loins and 20#'s of Slovacek's sausage (Jalapeno & Pork/Beef). We also made 2 pans of Bill's Taters. We served approximatly 125 people (originally told it was 100 people), the biggest group for us yet had a few leftovers but I estimated high for the possibility of extra people showing up. Everything went off without a hitch and the bride and groom were happy. I packed my stuff up and headed home around 930p, and CRASHED when I got to the house.......

Everything we cooked:
6 Trimmed briskets
16 Chickens
2 Pork Loins
20 #'s Sausage
2 Pans of Bill's Taters
