Quiz on beef

I'm paraphrasing here " This piece of meat was discovered by researchers at the University of Nebraska and the University of Florida during the course of a study of undervalued cuts of beef. The study also found that this specific cut is the second most tender cut of meat, after the tenderloin... As a whole cut of meat it usually weighs around 2 to 3 lbs"

I have no clue but voted all of the above. I'm really horrible at recognizing cuts of meat!

The answer is all of those names and a couple of more. Could be Butler steak instead of butter steak.

I remember reading somewhere about the study and that they found this meat. BUT, do not remember what they called it. Some memory HUH?
