First brisket

Smoking my first brisket tonight for lunch tomorrow. When my brisket reached 140 degrees my thermometer broke :cry: finishing this brisket with a analog thermometer. From now on I will be keeping spare thermometers haha.

You don't need it. I just use mine as a guide anyway. It tells me when I'm in the ballpark. BluDawg preaches is it & he's right. When it probes like hot butter in the thickest part it's done. You'll be fine.

+1 to this. The only thermometer I use is the main chamber thermo. I try to keep that at a steady 350 until the probe test passes. Hopefully it turned out well for ya. We like pics here!

Yeah, my first brisket carved up like medium-rare roast at a fancy Sunday brunch. Much better nowadays!

Make that +2. I check temp just to see where it's at but for sure the probe test is the way to go. Using temp only will get you into trouble.

I cook to a temp of 195 internal, then periodically probe. Some are done at 195, others around 205. There always seems to be about a 10* variation for me.

If your pit temp is about 350 about how long will the brisket have to cook before it reaches an internal temp of 205

I used to go by temp, but now I stick with the probe test. I do keep a temp alarm in there just so I know when it is getting close.
