CHEAP little piece of chuck rescued from the "Manager's Special Bin"
i poked it with the Jaccard tenderizer
then marinated in apple cider, soy, Worcestershire, garlic powder, for 1hr
seasoned with- instant gourmet - awake-a-steak
the smoker box was loaded with 1hr of pellets & hickory chips
indirect on the OldSmokey at around 275° for 1hr
it hit 125° IT when I pulled it
then reverse seared on the GrillGrates to 140°
it was pretty tasty
tender but still a little chewy
piece of chuck on the OldSmokey

I love rescuing meat from the used bin. Much it it goes straight to the freezer for future use.
