You guys and your "prime" briskets.... I've never even seen one for sale in Tyler. Wish HEB would arrive on the scene and break up the grocery store dual-opoly we have here.

Here are the two IBP prime briskets today at HEB for $2.98/lb
What is weird is that there were also Select briskets for 2.98/lb and other Selects at 4.98/lb
This one was select - go figure
I spoke to the manager on my way out and he asked if I bought any. Said I bought two and he said glad you got a good deal, do you do them in the oven? WOW BUBBA! Then we had a long conversation on smoking briskets - LOL.

The proce diferences that ive noticed is the trimmed vs untrimmed.

I thought the same.
The label indicates that it was trimmed but I don't think it was - didn't appear to be trimmed at all and similar weight as compared to the prime. There were trimmed briskets but I always buy packers so I don't look at them.
I went back 4 hours later and they were still priced at 2.98 so I picked up two more. There are a couple more - I picked up the 4 smallest.
On the other side of the trimmed briskets there were more prime briskets for 4.97/lb. Label indicates trimmed but they certainly weren't.

Got a 10 lb prime brisket at my local Costco last week for $3.69/lb, almost $3 cheaper than choice! It's cookin' right now. Temp is 189deg on its way to 203. Can't wait!!

I picked up a 10 lb select packer at Walmart in Rowlett today priced at $1.98/lb.
I threw it in the freezer for future use.
I cooked a 13 lb one last weekend and it was real good.

Any of you guys ever cook a brisket from Target? I know the Super Targets are grocery stores but I just haven't been able to bring myself to do it.

The brisket at Target was Excel cryopac full packer, 12.4 lbs.
I cooked it through the night and after 16.5 hours in the WSM this is what it looked like.

And after resting for an hour it was succulent goodness.

The only thing it lacks is a smoke ring, don't know why I am not getting one, it has a great smoky flavor does not overpower the meat, tender, moist.....couldn't really ask for anything more for texture and flavor.

I stumbled across a pile of Briskets at $1.77/lb and Prime at $4.77/lb at the new HEB off of Spring Cypress and Grant in Houston. I am only mentioning this after I stocked my freezer last night.
