I have cooked a couple times since I bought a digital thermometer to monitor grate temps. I overcooked a couple chickens after overcooking a couple briskets and finally decided to fix the problem. The first brisket off the new and improved pit came out darn near perfect. I nit picked it a little, but no one else seemed to agree with my grievances. You're always your own harshest critic. I also managed to put out a 7-rack rib meal for 20 people at the lake over labor day weekend. I never get it right on that smoker, but got lucky this time! It's a Hasty Bake and I don't like it one bit.
Probably the best thing out of both of these cooks though was the baked beans. I took the advice I have read on this forum and collected the brisket drippings. We used the skimmed fat in the beans and the aus jus over the sliced brisket. Those beans were out of this world good. Best I've ever had. Sometimes you just don't know what you're missing...

Forgot to mention I used oak and hickory on the brisket and cooked 275-300. I used pecan on the ribs @ 225. I'm liking the pecan more and more every time I use it.
