school me in "heat"

Hear people talk about that little or lot of "bite" at the front, in the middle at the back of your throat ect, heat in the front heat in the back bla bla bla. lol

Just curious if some one knows which peppers do what and hit where ect. ?

Black pepper, White Pepper Front heat
Red pepper( Cayenne powder) Middle heat
Chili's> Jalapenos, Serrano, Chipolatas , Habenaros, Chili de Arbol, Back heat
Never met a cow I didn't like with a little salt and pepper.

What Blu said...we could get into a month long conversation about what is a "Red Pepper", but I digress. :mrgreen:

I think for BBQ-ing - Black Pepper & Cayenne are the staples and provide the most consistent results.

The low end like jalapenos and chipotles I feel the heat dissipates the longer you cook them, sometimes they have very little heat to start.

On the high end habaneros dissipate some over long cooks - although the starting point (of heat) for habs is much higher. I personally like the "staying power" of a good hab burn...

I don't know where the different peppers hit in the front, but use too much and I'm pretty sure of where it's gonna hit in the back end...lol.

Good info from Gator and Bludawg. I think most opt for a light middle heat in their BBQ. If it's too 'in your face' you'll narrow your fan base to just those who can stand it.
