Smoked Venison Loin

BBQ Deer Steaks - our son took a nice buck opening weekend, today we are having loin steaks to celebrate. I took a half tenderloin, trimmed and rolled in Wild Thang Wild Game Rub then smoked @ 275 degrees over a hickory fire. The loin was cooked to an internal temperature of 150 degrees, which is slightly over medium. Left to rest for a few minutes, sliced and devoured! From field to table in less than 24 hours. No gamey flavor what so-ever. Awesome!

Congrats to your Boy on a nice kill Dan, and to you on a fine cook my mouth is waterin. I hope my luck changes,as Liz & I walked out the house this morning to start chores We stepped out on the front porch she spotted a nice young 6 point about 40 ft away in the yard and thought is was her job to pen it till I called her off. Ole mister Buck flashed us his tail as he disappeared into the brush on the fence line. Tomorrow I commin armed :rambo:
Never met a cow I didn't like with a little salt and pepper.
