stuffed poblano peppers & mini meatloafs
ground beef & pork sausage
sauteed red bell pepper, onion, mushroom & garlic - chilled
grated colby jack cheese
cooked indirect on the OldSmokey
it took 60'mins to get to 165°IT
not too pretty at the finish
but they tasted GREAT

basically the stuffing was my normal meatloaf mix
less the panko breadcrumbs, and in hindsight, i should have put in the breadcrumbs
i normally use ground pork with the ground beef but the store didn't have any
so i picked up a small tube of plain pork breakfast sausage
it helps to saute the chopped peppers, onions, mushrooms & garlic first. then chill it before you mix it with the cold ground meat
the cheese was just the house brand brick of colby jack that i grated and put in the mix
my seasoning to the mix is Mrs.Dash (salt free). and i added some cajun seasoning too (has salt).
i stuffed the peppers first. then i added a beaten egg to the remaining mix before i formed the mini meatloafs

Debbie and my MIL Hazel both really liked the stuffed poblanos, much better than plain bell peppers. they were a hit and have become a permanent recipe.

Capt'n did you brown your meat before stuffing and grilling or was it "all" cooked on the grill :?:

i didn't cook the meat
but i did partially saute the diced up red bell pepper, onions, mushrooms & garlic
then chilled the sauteed mix before it was mixed into the cold ground meat, grated cheese & seasoning
so the veggies wouldn't have a raw taste
then i stuffed the final mix into the sliced peppers after i had pulled out the ribs & seeds
i cooked them on my OldSmokey indirect opposite from my fire
it took 1 hour for the internal temp to get up to 165
