So my wife is a bbq enabler. She sends me a picture she saw on FB a few weeks ago. "i want you to make this for valentines day".. 3lb tomahawk steak. WELL............. here we go. We are too old to go out for valentines day, so I grabbed a $44, 2.7lb prime ribeye from HEB and a couple of lobster tails.
Went indirect @ ~300 with KBB, on the copper kettle till 120IT, let the hunk of meat rest for 20 mins, then a 700* searing on the gasser. While the steak was resting, grilled the tails over the fire for a few mins, then split them down the middle and grilled meat side down for a little char flavor. Decided not to use any wood, since ribeye seem to really soak up that flavor and I didnt want it to get too Smokey for the wifey.
The wife baked up some scallop potatoes (spilling blood on the mandolin of death to do it) and we had a Fabulous meal.

Thanks guys. I was very pleased with the entire meal. And i have to say there are only a couple steakhouses in Houston that i enjoy for the reason that i CANT make it better at home.. and at home i get to play in the smoke outside for a couple of hours. WIN/WIN
