Sprite/Fireball Big Bird..

Postby woodenvisions » Fri Feb 24, 2017 6:15 pm

Usually, we smoke whole cluckers a lot smaller than this 8 lber...
Rubbed with yellow mustard and used the last of our SB Texas Gold Dust, topped with Memphis Pit Rib Rub ( works GREAT on poultry as well ) and plopped it on top of a Sprite/Fireball whiskey sauna !
Smoke on lump and apple for I'm guessing maybe 2 hrs @ 275, 450 when it hits 145 internal temp to get the perfect crisp skin that we love so much

Hopefully it's a hit, a guy at work uses that combination all of the time so we will see I guess ??

Oh no, I'm not the slightest bit concerned with it being dry.
Every, I mean EVERY bird I've done with the 12 oz but plug has come out like a geyser as far as moistness...I'm concerned about using a Sprite/Whisky mix.

So, after a 20 minute rest, I disected tomorrow's dinner.
So relieved to know that tomorrow's reheat will be just as juicy using the NuWave.

So far, it's the ONLY way I've found to reheat chicken, especially the breast without drying it out.
