Thank you. I think next time I might try a pork tenderloin instead. I'm guessing if I smoke a whole tenderloin, then wrap it for an hour it will be juicy as can be. After that, I will ( cube ) it up and then marinate in the sauce for a day before a quick hi temp char over lump.
I'd be willing to bet it would be a lot more tender ??
What are your thoughts on that ?
