So the plan was set for corned beef and cabbage on Sunday. But, the wife decided she needed to go to work for a bit and couldn't make it to the store till late in the day.

So I decided I wanted to cook some ribs but not dirty up the big pit. I opted to try these ribs on the kettle. Which was fine because I needed to run a little hotter than normal.

Tried out Meat Church's new rub The Gospel. Has great flavor and color. I wish I hadn't let myself rub out of Sucklebusters Honey Sauce because it would have been a great pairing. Instead I had to get creative on the sauce. They were good but I almost wish I had done a Memphis style dry rib and skipped the sauce. Either way, made for a good dinner.

The Gospel is a great rib indeed, goes good with MeatChurch honey rub on a final layer. No need for sauce with that combination. Great job on the ribs.
How bout some more beans Mr.Taggert? I'd say you've had enough!
