First smoking happening today..

First smoking happening today..
So today is the first time I'm actually smoking anything. After a month of doing homework I've decided to try a chuck roast (was already in my freezer) to see how it turns out. I'm pretty much following all of your great advice and smoking it just like a brisket...
Here she is all rubbed up and ready!
I used two handfuls of Pecan and 2 hand fuls of oak (jack Daniel barrels)...
She's currently filling my driveway up with smoke!

I think I'm at the stall...
Hit 160 on meat and it stopped..
Smoker got a little warm (280ish), closed vents some and got it down to 230ish. Meat went down to 158 and now it's holding. Should I keep it at 230ish and ride it out?

Never done a chuck roast but on my briskets I either crutch them or ride it out at this point depending on the schedule. If I have people waiting or arriving soon I crutch if not I pop open another cold one and ride it out.

You got time. Keep wrapping in your back pocket in case things don't change in an hour or so.
If it hits 275 or so again and you can lock it in that will blow through the stall as well.

I wrapped it at 160. I'm currently at 185. I lost heat due to lack of coals I think and had to start more in the chimney. I wrapped it so it wouldn't get coated with ashes

I ALMOST had a full thing if coals in the smokey mountain but it just wasn't enough.

I started the wsm at 7:45 am and pulled the chuck off at 4:30 pm with a temp of 196. I wanted at least 200 but it was getting late.
I through it on a bun with a homemade onion ring and coleslaw topped off with some bbq sauce...
Everyone was very happy!
