Storms in Houston, Ribs on WSM

A small comp coming up in 2 weeks and the last time I cooked ribs they were overcooked and forgettable. SO for my own sanity I screwed the tent into the wood deck and fired up the smoker on a icky rainy day. Results were REALLY good. I am going to add one more dusting of HoneyHog at sauce time, but thats the only change i am going to make.

I thought they were great. I have gotten away from using brown sugar all together, just a drizzle of honey instead. While eating my wife looks at me, "OK.. what do you have bad to say about them". Besides wanting to give another little hit of seasoning later in the cook.. all i could do is SMILE and enjoy the ribs. Flavor was RIGHT ON and made me happy to eat them. Thats what i shoot for everytime i light the smoker. Also my buddy's wife who originally served herself 2 tiny ribs at first, went back for a helping of 3 fullsized bones. SCORE!!

Actually had a great bite to them.. :) loaded the meat up and went over to a neighbors place. Using his half dull chef knife instead of my usual knives. I did a little damage to the ribs while cutting.

Lol, I know what you mean about cutting, I have my top 2 knives, rest is light duties. Love that feel of a knife cutting with little energy needed. I keep them sharp ready to go,wife hates sound of me sharpening them on a steel.

My wife HATES when i use my honing steel (evertime i use my knives). BBUTTTT we get smoothly cut ribs and consistent brisket slices EVERYTIME.
