you just can't let it get past 125°IT
and we do slice it thin for sandwiches
it is more tender than eye of round or rump roast

Captain you had me drooling since you posted so I took a beef roast out of the freezer, weather been shocking here so slow cooked in the oven at 120 Celsius for 5 hours. About to make a sammich as I type,lol.
