We have pits like those at the halls here....really easy....fire and coals on the end meat on the other end

Bring a couple of thermometers for monitoring the heat next to the meat. Bringing that dude up to temp. may take some doing. Once the meats down I wouldn't even peak for the first 3 hours.

Cook begins tomorrow night. 11 briskets trimmed seasoned and ready to go. Going to take some progress pics as the cook goes on and will update.

These babies are on. So far pit with minimal wood is holding at 255 on far end.
