Thanks everyone who has chimed in and tips given. The pit was easier than I expected to cook on. The Brisket turned out in the top 5 ever and very pleased since I hadn't cooked on this pit before. Glad the suggestions and advice for bringing plenty of wood. The pit held temp well but needed more fuel every 45 mins. The pit and party was located at the Luthern Church in New Grove Texas just west of Temple. Cool little town. I receive many complements and some saying it was the best they ever had. So defiantly a success. Thanks everyone for following. Now back to real job keeping everyone safe on the streets as a patrol Sgt.
