Comp setup questions and suggestions.

Hey everyone my moms work has set up a BBQ cook off coming up and we have signed up they are having three categories brisket, pork ribs, and chicken. I plan on cooking all three. My main concern is keeping stuff clean. I'm going to get gloves for sure but I don't have a big fancy trailer with sinks and stuff in it. I am very picky about keeping my hands and utensils clean especially when mixing in chicken. So any suggestions on that would be great. I will have my gravity fed smoker pop up canopy and three folding tables. I have a long list of things to bring any suggestions on setup would be greatly appreciated. :chef: :salut:

Go to Sams and get three bus tubs for your cleaning station.
1st. tub hot soapy water.
2nd. tub rinse water.
3rd. tub. sanitize water. 1 gall of water to one cap of bleach.
We use one of these to heat our water.

Thank you for the response. By the sounds of it at the moment there will be a place open to wash. I'm not sure how many teams there will but it should be a fun experience!

Even if you have a place to wash up stuff, you still should have the 3 tub system handy, its the easiest way to do it with out a sink or two. Also depending on whether you are serving to the public most health inspectors require this setup. Also good luck with the comp.
