All set to start in the morning!
8.5 lb butt ready for action! Trimmed and a dry brine applied in the fridge. Tonight I'll rub it and prepare the WSM for its first pulled pork adventure. Got me some hog waller from sucklebusters, gonna pick up some craft beer and set the alarm for 4am.

Oh I'm going back to sleep once she's going. The iq110 showed up today. That and the maverick should keep her at bay until I wake back up...lol

It's only 34 degrees out but she's up and running. Got up at 4 finished everything and by 5:15 I was up to temperature.
Back to bed and the other half will be getting up soon to keep an eye on things while I catch some zzzzzzz's..

Temp is sitting at 183 at 1:30 in the afternoon. Getting down to the wire!

That eliminates the need for adjusting the air intakes. Set the dial in the box for a certain temp and it stays pretty close.

Yes it is. A buttermilk cornb read from pinterest. Very good!
The mac and cheese is from another forum, "a no boil macaroni and cheese" recipe. Really wasn't a big fan.
Pork was awesome, a little too done on the outside, may try 195ish next time. Had a big dinner for all of us plus 3 zip lock bags full for weeknights.
Really couldn't have pulled it off without everyone's knowledge on here! So much info to search!
