Those Baby Backs look mighty good. How long did you smoke them to have them stay so red? I have done several BB's but they never look red when finished. Have you ever done dry brine with BB's? I just read about that couple days ago and think I'll try it Sat morn. I smoke something, BB's, brisket,
pork chops, chicken almost every weed end. This is my first response to a posting. Hope it gets thru ok!!!

Salt and Pepper, Old Smokey Marinade, Smoke at 275ish for 4 hours, sauce at 175, (3-3.5 hour mark) pull between 185 and 195. No rap, no foil, no flipping, lots of Miller Lite oh and a Thermopop. Let rest for 10-15 minutes before cutting. They always turn out this good when I listen to Early ZZ Top, maybe it's a Texas thing? Who knows?

All the ones I've been buying from HEB have been that way.
Just did 2 racks yesterday, lots of meat.
Did them for 5 hours in my electric smoker. Fell of the bone, could have brought them out at 4-1/2 for a little more chew.

Nice cook, meatier than anything I get. Mine are normally cut to the bone, but when my friend had his butcher shop, I used to get good meat. Well done.
