I cooked a brisket this weekend and i killed it, flavour was great but meat was crumbling. I think i know where i went wrong so hopefully i can get some agreement as confirmation.
On a sidenote, the point was separated from the flat once cooked and did burnt ends and they were the best i have done so not a total failure.
I wasnt feeding many people with this so i picked up a smaller packer than i am used to. This was about 10-11lbs trimmed.
I put it on at midnight like i usually do with my briskets but it started getting up in temp a lot quicker than i wanted so i dropped temp to stall the cook. I did this probably 4 or 5 times.
Plan was to get it done by 4.30pm then wrap in foil and in to a cooler for 2hr rest but the way it was tracking i was looking like having it done by lunchtime and i didnt want to rest it for 6.5hrs.
Once probing nicely I wrapped the meat in foil and instead of putting in to the cooler i put it back on the grill for another 30mins or so before turning it off (guests were running late). It stayed there resting for 1.5hrs.

If the slices were crumbling then it was probably over cooked it could have also been too hot to slice and not firmed up.

Yep i had "pulled" brisket on a bun with mac'n'cheese and coleslaw which was great.
The wife kids and guests thought it was great but i knew better.

You can salvage it but letting the slices soak in some good aujus .
Another option is to simmer the slices in a crock pot on LOW for a few hrs with some good sketti sauce, add some chunks of procuito and garlic and serve over ur favorite pasta.
You will never know it was overcooked.

Or a tortilla. I think we all have been there on the overcook. If you are wrapping in foil and placing in a cooler you might let it rest unwrapped for about 15 minutes before wrapping.Briskets will continue to cook in foil after being taken off the pit.
How bout some more beans Mr.Taggert? I'd say you've had enough!

Just my .02, I think what really got you was putting it back in the smoker. By your timeline it basically cooked for nearly 2 additional hours.
