I score my flat and point accross the grain before I put the rub on. It is easy to find after the cook that way. :D

So do you corner it off....or just slice through it without cutting all the way through? And basically you just cut on that angle?

I didn't get back to Arkansas in June, but I made it in July, and was pleased with the results of my second Brisket attempt. She smoked like a champ!
