I score my flat and point accross the grain before I put the rub on. It is easy to find after the cook that way.

So do you corner it off....or just slice through it without cutting all the way through? And basically you just cut on that angle?

I didn't get back to Arkansas in June, but I made it in July, and was pleased with the results of my second Brisket attempt. She smoked like a champ!
