I've had a lot of free time on my hands and I've been firing the pit up a lot lately. Smoked this prime brisket last week. Business as usual.

What temp and how long was this stunning creation cooked at?

Thanks all for the replies...it definitely melted in your mouth and was just plain darn tasty. I've got my brisket down and can consistently get these results now.

I cooked this one at about 265 degrees and it was ready in just a tad over 8 hours. Straight oak for smoke.
