Ok. Went back and re-read some more here. Silly me :banghead: Did you use a grate thermometer or just the door thermo? The door thermometer CAN be a good one, but you have to make sure it is accurate first. Try testing it in boiling water to see if you need to adjust it. Tx1911 hit the nail on the head with the temp too. Don't really want to go lower than 250, and fall off the bone may be good but it is overcooked for a rib. If they were what you described after your method, I would say your thermometer is about 50-75 degrees off.

No I did not have a grate thermometer. I didnt think i needed one as bad since the one i used had a 5" stem. Which was about an inch or more above the grate. So i had assumed it was good enough. BUT i ordered a digital thermometer that will sit on the grate. Should be here today.

As soon as i get the new thermometer I will test both of them for accuracy.
