Bark Question on Brisket

I notice when I take my brisket off smoker bark is nice and crispy....after foiling it to finish it off not so crispy...besides not foiling anything I can do? Also see a lot about butcher paper in here...what's the deal with that?

Once the brisket has rested while wrapped open the foil and place back on the cooker for about 30 minutes or in the oven for that matter. Your bark will reset.

When you foil it, you are basically steaming it and killing your bark. Throw it back in the smoker before serving to get your bark back.

People don't know why they wrap with butcher paper. They only do it because they saw Aaron Franklin doing it at his restaurant. The theory is the paper lets it breathe, unlike foil.
