How long you let your smoker heat up before cooking? Do you wait for all temps to get constant ?

I personally prefer my pits having a temperature difference from one end to the other. I actually have a 50deg difference from left to right so i can utilize the dual zones to perfectly time my cooks

I've got it both ways. I have a damper between the firebox and cook chamber. When it's on the second setting, I can hold 250 all the way across the 48". If I open it all the way, I get a good hot spot by the firebox

I made my own. Had to make adjustments to it but noticed a huge difference. I use a water pan and the first 2 cooks I had to refill it several times during the cooks, given it was longer but I could tell it was a lot hotter right by the FB. With my current setup I did not have to refill it but all of the water was gone by the time I Pulled the meat. It definitely distributed the heat a lot better. I only have one grate probe and my top gauge and they were darn close. Before there was at least a 15 degree difference.

Usually I hit my target temp within 40 minutes. I get that reading from the grate and don't concern myself about the door thermos. I monitor the door thermos for rise/fall only so I don't have to open my door if not crucial that I do so. Lol. Even if those are off by 100 degrees, they remain steady regardless unless there's a temp fluctuation.

These can help balance temps across the grate if you're that bad off. Every cooker is different though and I'm fortunate enough I don't need them.
