Thawing out a Brisket ?
Got a 14 lb Brisket in the freezer. Anyway possible of thawing it out in say 8-12 hours.
Looking at all the fine briskets on here lately gots me hankering to smoke one up tomorrow and give Butchers BBQ injection a try.
Don't really want to run to Costco on a Saturday to get a fresh one. our local Costco is a zoo during the week, can only imagine what it would be like on a Sat.

14 lb packer for tomorrow may not happen if you haven't taken it from the freezer at least 5 hours ago. I would set it in the sink overnight (in the original wrapping of course). Normally, it takes me a good day and a half to thaw a 14lber.

Re: Thawing out a Brisket ?
Hmm, I think ur pushing ur luck in that time frame unfortunately.
If I recall, I'm thinking u will probably need at least double that time, most likely close to 2 whole days to be Completely thawed.
I still like the fridge and submerged ( wrapped ) in water deal for all frozen meat, but that's just me playing it safe.
I'm sure you will get some good answers if my answer is off a bit.
Good luck man :)

Drop it in the sink and fill with cold water. Change out the water every 30 - 45 minutes. Still not sure if you'll make it.
I'd recommend biting the bullet and throwing some elbows at the Costco meat case for a sure thing.

Re: Thawing out a Brisket ?
Thanks y'all for the replies
Left the Brisket in the Cryrovac and threw it in a 120 qt ice chest full of cold water 4 hours ago. Feels like it is thawed out already. . The flat is definately thawed. It bends when I lift it out of the water. Going let it stay in there a couple more hours and then back in the fridge.
Thanks again guys.

She's thawed and back in the fridge
Mixed up some Butchers BBQ Prime Brisket Injection.
Plan on rubbing it down with Gators SPG and Brisket rub then wrapping in Glad wrap. Going inject it after wrapping and let it chill out in the fridge thru the night and put it on the pellet crapper at 4 am tomorrow.

Sure as heck do my friend
The water bath in the cooler worked a lot faster then I thought it would.
Only problem is it seems like every time me gets in a hurry to smoke somthin it turns to garbage.

That happens to me as well. Getting in a hurry will kill my cook everytime. Just gotta step back and do what you know!
