Out of the foil and back on to firm up.

I will say, I'm missing my Hog Waller. Color is not quite what I'm used to. Tenderness looks to be there. Both racks absolutely passed the bend test. I just really want the bark to firm up. Building another layer of flavor in about 15 minutes via the SuckleBusters Chipolte sauce.

After basting with SuckleBusters Chipotle, color was much improved!

I guit giving pork bones to Buck. He chews them in a matter of seconds. Then throws them up behind the TV at night. At least he's smart enough to do it on the hardwood floor and not the rugs :lol:

May I ask, what type of ribs used? How long did you leave them in foil? Total cook time?

They're spare ribs, cut St. Louis Style, and smoked using the 3-2-1 method. Three hours nekid, 2 hours in the foil, and about 45 minutes nekid again.
