For a good bark, fat side up and very corse pepper does it for me. I also use Kosher salt, but it's the corse pepper that creates the bark.

Also, if your not getting the bark you want wait to wrap it. On a 14 hour smoke I may not get the bark I want until 12 hours. Then wrap for the last hour or two to finish it off.

I second the coarseness and generosity applying of the rub as a factor. My best barks have been with coarse salt/coarse pepper, no binding agent, no spritzing and letting it ride the whole cook (which seems to go against all the other advice here). Isn't BBQ funny like that?
