Holding Brisket and/or reheating Short Ribs

Postby lowandslow1 » Mon Jun 12, 2017 10:21 am

Problem: Son's graduation ceremony on Saturday night, party on Sunday at 2pm.
Question: Best way to store and reheat short ribs?
I originally was going to reheat the brisket, but decided to reheat the short ribs (figured it was easier).

Smoking a brisket for the party, plus two racks of short ribs. Only room for brisket or short ribs on smoker at a time. I won't be able to start the smoking process until 10pm on Saturday, which works out okay for the brisket... except I'll be a zombie for the party. I'm thinking of doing the short ribs on Saturday morning as they seem easier to reheat on Sunday.

Best way is to have them in "seal-a-meal" bags and put the bags in boiling water, but you might consider cooking them to just a little rare beforehand then after you pull the brisket to let it rest before slicing, you can slap the ribs on for an hour or however long logistics and level of undercook demand/allow.

I had the same issue when i did 2 pork butts and 2 racks of spare ribs.

Are you wrapping either meat? if so in what?
If it were me I would probably do the brisket 1st and then wrap it and throw it in the oven and then throw the ribs on. Then right before its done throw it back on the smoker to get the bark back up on the brisket while the ribs are resting.
