Favorite pork..

Postby Txdragon » Mon Jun 12, 2017 10:15 pm

Ok so, I can't be as young as I am at 38 and be the only one here to know what pigs I prefer to harvest for some tasty chops?
Since really digging deeper into the commercially raised and actual sought after breeds for that porky goodness, I can say I love 3 breeds now. Berkshire, Duroc, and recently added: Vietnamese potbelly. Yup.. I came across an ad in Craigslist the other day; a couple had, for free, 5 potbelly pigs they had to get rid of but WOULD NOT one-at-a-time it. They wanted them all gone at once. I asked if there were objections to turning them into freezer filler, they said once I got them, they were mine to deal with. Fair enough! Got them home yesterday evening and made a long night of dispatching and dressing said piggies. They were all fair sizes too; ranging from 85 lbs to 30 lbs. Got the bulk of the processing done today and tried out a little pork chop that was about the size of a lamb chop. This is some flavorful meat. A touch on the tough side (maybe a tad more than store brand), but juicy as all get out.
I've never eaten a well done loin chop that turned out this juicy, ever! I'll be curing a couple hams (look for that post tomorrow in the cured meat section) and look forward to those in a few weeks!

Anyone else ever tried this type?

I shot a Potbelly while hunting Ferals behind my house when I had the Ranch and had my Processor cut and wrap it for me. Great taste IMHO. Most times it's what animals eat that determines the variety of tastes among the Breeds.

I split half a pig with the in laws and honestly have no clue what type of pig it is. This was our first year with this guy and we are more than satisfied with the flavor.

That's the very notion behind my proposed finishing diet. I would like to raise a couple pigs and for the last 90 days before slaughter, finish them with lots of fruit; watermelon, apples, peaches, etc. My original concerns were that they were slopping them but the folks told me they had been feeding them 13% pellets and corn, so fairly standard feedlot food. I find their flavor really close, if not on par, with Berkshire pork.

Interesting plan there - - - - I've raised a few hogs (Landrace ?sp?) but only up to barely slaughter size and always fed them free choice "creep feed" from the Feedstore. Keep us in the Loop on this one, OK?

We had one or two living next door. And this is the BURBS. Evidently you are allowed to keep a pig, and he was a rescue. I named him Piggy Stardust. :P

People think potbellies are cute, and then the pigs grow up, and the people ditch them. I was afraid he would stink or holler or get aggressive, but he was fun to watch from afar, escaping from his cage. When it was time for him to move on, you'd think they were dismembering him then and there from the noise, but he just didn't wanna get in the cage.

Didn't mean to write a novel. Carry on. :laughing7:

I'm sure the one I popped that was running with the Feral Gang was an escapee from Yuppieville - - - - :chef: He'd probably been eating BonBons and drinking Cappichino most of his earlier life. :laughing7:

A while back another neighbor's pet pig got loose and was wandering the neighborhood. It was very large & probab;y pretty old. Finally, a few neighbors escorted it home. Now I wonder what kind of pulled pork it could have made?

I find Duroc offers no QPR. Berkshire is top notch indeed. I also like Red Wattle a lot, but is more difficult to find.

Every other pig farmer in my neck of the woods is selling red wattles right now. A tad pricey compared to berks, hamps, or even duroc, at around 4 bucks per pound and average sizes are around the 60lb range. Seems the larger ones are a bit more wallet friendly. See a few 100+ lb berks around 2 per lb pretty frequently.

What, please, does QPR mean?
