Anniversary eats

We were GOING to eat at a certain restaurant, but they weren't answering their phone. We took this to be a bad omen, so out came the previously Q'd baby backs for a reheat. I did a potato salad in about 3.5 seconds flat (using my new favorite Nuke'em method), and the chard had been picked, cleaned and chopped the night before. That just took a little bit of pan-steaming while the ribs were heating, then seasoning with brown sugar, soy sauce, and sesame oil.

Better food than the restaurant, AND we get to watch a movie while we eat. ;)

Happy anniversary from down here as well. In 3 days time it's mine as well, 40 years. We are having a weekend away in hanmer, about an hour and a bits drive from here. Kids and grand kids coming as well. Wife's rented a house. Hot pools there for the kids so we are looking forward to it.

Thanks, everyone! Officially declaring this Anniversary Week. Feel like being lazy, wandering around, grabbing an ice cream cone, like that.

A while ago, we drove past the waterfront tourist trap hotel where we were going to dine. LOTS of construction work going on. No wonder they weren't picking up the phone. :laughing7: So we'll try for maybe tomorrow or Thursday.

PS: Happy Anniversary to you, too, Russ. That sounds GREAT! :cheers:

Sure! It's simple enough. First prep whatever dressing and add-ins you like (we generally use mayo, mustard, celery, salt/pepper and some form of onyawn).

Get three or four small red or yellow potatoes of an even size and shape. Scrub, then poke a few times with a toothpick so they don't explode. Place them in a ring on a nuker-safe plate. Nuke until JUST done, and this will vary with size of taters and power of oven. I think the last batch of three we did ran 7 minutes.

Let taters cool until you can stand to handle them, then wrap loosely in plastic wrap or wax paper. Squish them down halfway. The skins should now slip off easily. If you can't get all the bits of skin it's fine. Dump the tater lumps right into the dressing and add-ins and mix. You can eat it then and there. We usually force ourselves to wait. :mrgreen:

This'll serve two with maybe some left over. What I like about this is no peeling, no heating the kitchen, and it's easy to make a fresh batch daily.

Man, that sounds great! :cheers: Many thanks. I'm gonna try the Sailor Kenshin method. Potato salad is one of my favorite foods but it's a pain to make. This could change everything.

We also started using this method with home fries.

What I didn't like about most Nuke'em potato salad recipes is that they always called for you to peel and cut the taters first, and they never came out well.
