Brisket saturday!

I had to search far and wide yesterday to find a brisket for today, not sure why.. Anyways, finally found 1 and decided I was going to try some new stuff...
Made an awesome injection (I will gladly share the recipe if the results turn out like I hope they will) and injected this little choice packer with about a quart of my crafted concoction. I used a slightly modified method somebody here mentioned during the injection process to keep the darn splatter to a minimum. Lol
I kept it in the package and just injected to my heart's content. I got ZERO injection splatter, And this also served to allow the brisket to marinate in whatever did manage to leak from the injection sites. Win win!!

After about 16 hours post injection, I rubbed it down with some SB Hoochie Mama, SB Texas Pecan, and some medium grind black pepper. I opted not to trim any fat since this was a small choice packer, just barely coming in at 11 lbs.

She was put on the smoker about an hour and a half ago at 250 degrees using kingsford and hickory chips. More to follow on today's adventure, stay tuned!!

Looking forward to the play by play on this one - - - if I were to cook a brisket, that would be about the size I would ?TRY? - - - - funny how KAM's tip on the splatter prevention was so obvious but none of us had thought of it :banghead: :dont: :roll: :laughing7: :D :lol:

Great idea, long as your injection needle isnt so big it takes a "bite" of the bag and plunges inside the brisket.

The smaller the brisket, the harder it is to get right, in my opinion.
Ah ha! KAM gets the credit for the bagged brisket. I think it was suggested as cling wrap, then inject.
