They say it's like riding a bike.?!?!
Well, hopefully that's true with this 6 lb Point. Been a Long Long time since I've reached in my wallet for a Brisket purchase. 8$ a # ain't great, but oh well, sometimes ya gotta bite the bullet I guess.
I just hope the end result is like I remember the last few times I smoked one. This time I'm gonna use Pecan chunks and try a different process and rub.
I've never injected a Point before because it usually isn't dry, but I liked the flavor of the Apple Juice/Whiskey injection so I gave it a few pumps with that. Hit it with Yellow Mustard, and then with a ( Prime Rib ) rub that I got from a guy at work that he concocted.
It looks like it's gonna be perfect for a great bark, which to me is a must.
I guess we'll see sometime tonight?

I look at it this way, if it turns out to be fubared, I'll just cheat and slice it thin, then throw it in the crock pot with some good sketti sauce .

Thx for the confidence BB...
Remember those ( variables ) I meantioned ?? Well, I'm starting to ( come undone ) a bit.
I look at the meat temp probe on the ET 733 and it reads 45 degrees F after 3 hrs in, and the dome temp probe of 72 degrees F....
Great, the Maverick took a dump.
Thankfully, I can get a somewhat accurate grate temp because I replaced the stock dome gauge with a Tell Tru and that's reading anywheres between 225/235 so I'm ok with that knowing the grate temp is prob 20 higher.
Only thing I can't tell is internal food temp.
I'm gonna wing it and hit it with the hand held instant at about the 6 hr mark, I just hate opening a kamado lid for anything.
I'm gonna pull out the sketti sauce for plan b lol...

Well, considering I was ( blind ) the last 6 hrs of this cook, I either got lucky or the Brisket God's were watching over me.
Took 9 hrs total to be probe tender, ended up at 208 degrees.
Never added 1 piece of lump or Pecan the entire cook and still have enough for another couple hrs by the looks of it.
Just wrapped it good and put in the cooler, I'll take it out in 2 hrs or so and slice a piece or 2 off. I'll make some Coca Cola sauce in a bit.

Man.. At 8 bucks per lb, I'd stay clear of it also. It is just the point though. Usually far overpriced vs the whole packer. I will try to catch brisket sales and buy a couple, then break them down myself if I want to have individual pieces, just for that reason.
