Found a brisket in the deep freeze!

Postby Chasdev » Tue Jul 18, 2017 7:51 am

So I'm poking around in my deep freezer doing sort of a quick inventory and found a lost brisket!
Dang thing has been in there since April 27!
It's still sealed in the original plastic and shows no signs of freezer burn setting in, should I get it out of there and start thawing or can it stay frozen longer and still be (if it still is) good?
How long is too long, in the deep freeze that is?

If it's still in the original vac pack, that'll probably not show the slightest signs of freezer burn for several months yet. You've got time! To add to this, it also depends on your freezer performance.

I have kept briskets as long as 13 months in their original package with no problems. I double wrap in freezer paper to protect the frozen cryo.
Always remember slow and steady wins the race.

That's good news, thanks!
It's just too dang hot to be cooking briskets, at least while I still have 6 or 8 vac packs of cooked and sliced sitting on top of the packer..
