Lotsa lunches

After a good week of turkey lunches, I decided it would be nice to have brisket. Threw an 11lb choice on the Camp Chef this morning. I'm sure more pics will follow!

Slathered with yellow mustard, rubbed with "Raider Red's Rub". Gotta support the alma mater on occasion.

Not foiling on this go around, letting it go nekid till it's done. Unless the bark gets to be too dark, of course.

My Camp Chef has a "lo smoke" and "high smoke" setting. I use the "high smoke" setting for the first few hours, in this case, it was bout 6. Then I turn it up to 275 until it's done. I expect it to take at least another 3 hours. Just checked it and it's at 152 in the middle of the flat. Bark's looking good though.

Due to time constraints, this cook has been modified from its original version to fit in the time alotted. Click the pictures for right-side-up...

Man, this is slow going today. Chugging right along until the lead up to the stall. Hit 150 at about 3:30. Turned it up to 275.

Fast forward to 6, and internal was at 161 and hanging out.

It's at 165 right now (8:04 central) so I broke out the old Texas Crutch in the hopes I'll get to go to bed at a decent time. Fortunately I am not cutting it tonight or anything. Slicing tomorrow for lunches.

Well, it shot up really fast. Pulled at 204, at 9:08. Makes it just under an 11 hour cook. I may slice a piece off tonight for a taste test, but will do the real slicing tomorrow.

We had chicken thighs for dinner. Brought it in the house and my wife says "that's not fair...Now I'm hungry again."

Well, I couldn't wait. Sliced up and will be vacuum sealed in the morning. Click pics for non-gravity defying....

All done. The flat and the first 2/3 of the point sliced really well. The last third of the point, not so much. But, at least I got samples out of the deal!
